Fudgy and moist deluxe chocolate chip brownies. If you have a sweet tooth for chocolate then these vegan brownies have you covered.
Overview
Nothing beats a warm and soft brownie fresh from the oven. Aside from the standard lineup of kitchen tools, this recipe has two essential equipment considerations. In addition to the normal baking necessities like an oven, measuring cups, mixing bowls etc. you will need:
A food processor is used to blend the silken tofu. Which acts as egg replacer and gives the brownies that chewy and moist consistency.
The 9 x 9 baking dish, as you may have deduced, is used to bake the brownies. We will walk through that process next in the section below.
Baking Notes
To start add the silken tofu, sugar, and cornstarch to a food processor. Blend until the sugar crystals are dissolved and the mixture is a smooth consistency.
In a large mixing bowl add the dry ingredients: cocoa powder, flour, baking powder, and salt. You might be able to get by with a medium mixing bowl for this step but be mindful that the wet ingredients will be added next. So you will want to choose a bowl large enough to contain all the batter ingredients.
Next, add the wet ingredients: melted vegan butter, vanilla extract, and oat milk. Mix everything together until the batter is smooth. Use a silicone spatula to fold in the chocolate chips.
Add the batter to 9 x 9 baking dish. Use a silicone spatula to remove all the batter from the mixing bowl. Then use it to smooth the top of the batter in the baking dish.
Preheat the oven to 350ºF and bake on the center rack for 25 – 30 minutes. When the 25 minute mark is almost up insert a toothpick into the brownies and remove it. If the toothpick pulls out clean then it is time to remove them from the oven. Otherwise, add time and repeat until the toothpick pulls out clean.
Once removed from the oven let cool on wire rack. When the dish has cooled sufficiently the brownies can be cut into squares.
Substitutions and Variations
Below are just a couple ideas to switch things up. Feel free to experiment with this recipe and make it your own.
Nuts – If you are interested in adding some nuts then walnuts are an easy addition to make.
Chocolate Chips – In place of chocolate chips you might try caramel chips or skip the morsels altogether.
Ice cream – There are a lot of great vegan ice creams on the market these days. These brownies would make a great addition to some. Especially with some caramel sauce drizzled on top.
Storage
The brownies are great cut into squares and stored in separate container. This is an ideal option if you are traveling to a gathering or potluck. It is also an option to cut them into squares as you need them and left in the 9 x 9 baking dish. When choosing the second option just place a sheet of aluminum foil over the top and store in the refrigerator. These should keep nicely for a couple days before they start to lose their freshness.

Ingredients
1/2 cup silken tofu
1 cup sugar
1/2 Tbsp. cornstarch
1/2 cup unsweetened cocoa powder
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegan butter, melted
1 teaspoon vanilla extract
1/4 cup oat milk
1 cup semisweet morsels
Directions
- Add silken tofu, sugar, and cornstarch to a food processor. Pulse until all ingredients are incorporated.
- In a medium mixing bowl add the dry ingredients followed by the wet ingredients. Mix well.
- Add the chocolate chips and fold them into the batter with a silicone spatula.
- Add the brownie batter to a 9 x 9 square baking dish.
- Bake at 350ºF for 25 – 30 minutes. Insert a toothpick into the brownies. If it pulls out clean remove the dish from the oven and allow to cool on a wire rack. Otherwise, add time and repeat until it does.
- Cut into squares and enjoy! 🙂
