Overview
Moist and delicious chocolate pecan brownies. The pecans add to the flavor profile, as well as, the texture. These vegan goodies are simple to make and hit all the comfort food buttons. There are two equipment considerations that are required for this recipe.
Aside from the normal kitchen utensils such as measuring cups, mixing bowls, a spatula etc. You will need a food processor and a 9 x 9 inch baking dish. The food processor is used to puree the silken tofu, sugar, and cornstarch. While the 9 x 9 inch baking dish, as you may have guessed, is used to bake the brownies. The complete process is detailed in the sections that follow.
Baking Notes
Tofu Mixture
There are many types of tofu but for this recipe you will want to select silken tofu. It acts as an egg replacer. Add the silken tofu, sugar, and cornstarch in the food processor. Pulse until all the ingredients are combined and the consistency is smooth.
Brownie Batter
In a medium mixing bowl add the dry ingredients followed by the wet. Use a silicone spatula to stir the ingredients until they are combined. Add the chopped pecans and fold them into the brownie batter. Once all the ingredients are incorporated set them off to the side and get your 9 x 9 inch baking dish out and continue to the next section.
Baking the brownies
Grease the 9 x 9 inch baking dish by adding a tablespoon of canola oil. Use a paper towel to evenly coat the surface. Use a spatula to scoop the brownie batter into the dish and to even out the top.
Bake at 350ºF for 25 to 30 minutes. When the time elapses use a toothpick and stick it into the brownie in several spots. If it pulls out clean then they are done. Otherwise, add time and repeat until the toothpick pulls out clean.
Use pot holders to remove the baking dish from the oven and place on a wire rack. Allow the brownies to cool completely before slicing into.
Storage
The brownies are great cut into squares and stored in separate container. This is an ideal option if you are traveling to a gathering or potluck. It is also an option to cut them into squares as you need them and left in the 9 x 9 baking dish.
When choosing the second option just place a sheet of aluminum foil over the top and store in the refrigerator. These should keep nicely for a couple days before they start to lose their freshness.

1/2 cup unsweetened cocoa powder
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup canola oil
1/4 cup oat milk
1 teaspoon vanilla extract
1 cup chopped pecans
Directions
- Add silken tofu, sugar, and cornstarch to a food processor. Pulse to combine.
- In a mixing bowl add the dry ingredients followed by the wet ingredients.
- Add the pecans and fold into the brownie batter with a silicone spatula.
- Grease a 9 x 9 inch square baking dish by adding a tablespoon of canola oil and use a paper towel to evenly coat the dish. Use a spatula to scoop the brownie batter into the baking dish and then smooth the top.
- Bake at 350ºF for 25-30 minutes. Insert a tooth pick when the time has almost elapsed. If it pulls out clean then they are done. Otherwise, add time and repeat the tooth pick test until it does come out clean. Then use potholders or oven mitts, to remove them from the oven.
- Allow the brownies to cool on a wire rack. Cut into squares and enjoy!
