Description
Every weekend I like to fire up my Blackstone Griddle and make a batch of pancakes. For best results I recommend using a griddle or cast iron skillet. The ingredients should be readily available for most pantries.
Typically I have some chocolate chips that I throw in but you could easily add dried fruit or nuts.
For toppings I usually use maple syrup but in the past I’ve also used agave nectar. Add a pat of vegan butter to the top before serving.
Some of the vegan breakfast sausages have also added their way to my plate lately as a side dish. All and all this is an easy meal to prepare and a satisfying one to eat.
Ingredients
1 1/4 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 1/4 cups Oat or Almond Milk
1 tablespoon oil
1/4 cup chocolate chips (optional but recommended)
Directions
1. Sift the flour, sugar, baking powder, and salt into a large bowl. Whisk the oat milk and oil together in a small bowl. Stir just until blended; mixture will be lumpy.
2. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edge are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
